AWARD WINNING EXECUTIVE CHEF JOINS THE TEAM

Award winning executive chef Jason Peppler joins the Victoria Park team this year and brings with him a mouth-watering new menu for functions and the Bar.Bistro. The new menu is classically inspired with a modern twist and is the perfect addition to the first class dining experience at the picturesque Victoria Park venue.

From owning his own restaurant (Confit Bistro, Brisbane) and working with some of the best chefs in Brisbane and London, Jason's 22 years experience of creating culinary delights now lands him just two kilometres from Brisbane City at Victoria Park.

Starting his career at Restaurant Two Small Rooms in Brisbane he has launched himself into an amazing career working side-by the likes of legendary chefs Michael Bourdin, Marco Pierre White, and Martin Webb.

"The new menu is based on seasonality and is a modern but practical interpretation of the classics. I particularly enjoy cooking European dishes (French, Spanish, Greek) as the Europeans love food and cooking and food is part of their culture. I also enjoy cooking with Asian flavours due to my heritage being a quarter Chinese," Mr Peppler said.

"It is a pleasure to join the Vic Park team as I appreciate the pro-active attitudes of venue's directors and their vision of bridging the gap between restaurant and function menus," he said.

The new menu incorporates fresh produce sourced locally including artisan breads, locally caught seafood, signature morning tea items (baked by Jason himself), and a variety of seasonally inspired salads. It also features Jason's delicious signature dish, the pastilla of slow cooked duck with Persian coleslaw and pomegranate dressing.

Jason took home the Australian Young Chef of the Year award in 2004 and subsequently the Australian Chef of the Year award in 2005, along with Restaurant of the Year in 2006 for his work at Isis Brasserie in Brisbane.

This year Jason plans to implement quarterly cooking classes and special themed dinners to inspire people to learn to cook well and enjoy quality food.
